Chunky CBD Infused salsa

So the other day my significant other and I decided to head down to our local Carl’s Junior. They debuted a CBD infused burger on 4/20 (the first major fast-food chain to do so). Get this, the “Rocky Mountain High Cheeseburger Delight”. It was only being offered at one location, and we live close. So we figured, why not? While my sweetie and I were chowing down on this thing, we were informed by an employee that it was actually the “Santa Fe” sauce infused with CBD. I found this interesting and moved on with lunch. As we casually chatted she blurted out “I just had a brainstorm”. “Uh-oh” I thought to myself. She continued by making me aware that we were having a party at our place. She then proceeded to tell me that I was nominated to make my famous salsa and infuse it with CBD. She looked me right in the eye and said “well, you in”? It did actually sound like a lot of fun, so I said “Yes, I’m in”.

 

CBD has become a topic of interest, with our circle of friends, as of late. They were all aware that CBD does not have the psychoactive effects that THC does. So, it doesn’t get you “high”. CBD salsa would be the perfect crowd-pleaser, I had to admit. We finished our CBD burgers (which were awesome btw) and headed home. I had half the battle licked; I already had a good CBD oil connection in CBDHempWise. I could always rely on them for good CBD oil that was cheap. In fact, I had just recently purchased a bottle of Mojito Lime Hemp Extract (Extra Strength – 1oz, 1000mg CBD). I love the stuff; it’s actually been a big game changer in my life. My girlfriend is the social butterfly. I’m more of an introvert; prone to anxiety. That includes social anxiety. I like CBD because I’ve never noticed any negative CBD hemp oil side effects. The CBD hemp oil benefits I experience are very positive. It sets my mind at ease knowing it’s legal as well. My CBD oil dosage will vary, depending on the situation. My anxiety is probably medium when it comes to parties, but with CBD I’m chill.

 

My better half and I have purchased all our party favors and decorations (and beer). I tracked down everything for my salsa too. I made a small batch last night for a trial run. My gorgeous gal raved about it. There is little doubt as to her sincerity – she devoured copious amounts of the stuff. We polished off our beers and agreed the salsa was a real winner. We were feeling pretty confident about our upcoming party (I’ll update this blog following are little soirée). I thought some of you may enjoy the recipe, so I’ve included it below. Stay thirsty my friends.

 

Chunky CBD Salsa

  • 15 oz. can whole tomatoes, chopped
  • 15 oz. can crushed San Marzano tomatoes
  • 20 oz. of diced tomatoes
  • One sweet onion – peeled & chopped
  • 1-2 jalapenos seeded, membranes removed & minced
  • 2 cloves of garlic – finely chopped
  • Half a cup of fresh cilantro -finely chopped
  • Half a can of diced green chilies (do not drain)
  • 1 lime zested & juiced
  • ½ tsp. salt
  • ½ tsp. of ground cumin
  • ½ tsp. Tajin Clasico Seasoning
  • 4 droppersl of Extra Strength Mojito Lime Hemp Oil

 

DIRECTIONS

Combine all ingredients in a food processor. Pulse until the mixture becomes well blended. For chunkier salsa – Pulse it only a few times.  Want smooth sauce – pulse a few more!

 

  • Serves about 15 (5 ½ cups)
  • Salsa takes about 15 min. to prep.

Spring Break Key lime Minis

They were perfect on a Road Trip to Spring Training & Survived the Cooler at Spring Break. I am always looking for CBD recipes to curb my anxiety and provide pain relief. CBD is my “2 birds with 1 stone” answer. To Ease Anxiety & Reduce Inflammation – that equals pain relief for me. I know I am going to need it. These longer days and the start of Daylight Savings time; admittedly gives me a boost. I notice my interest in social activities and entertaining grows. Unfortunately, my anxiety does too. Sometimes just the thought of entertaining or being the host will make me anxious and stretch me a little thin. So-why then do I push myself to have guests and serve food and drinks you might ask???

 

Because IT’S EASTER! I ADORE EASTER. I am the uncle that loves candy and sweets, chocolates and ice cream, cookies and all the things grandma warned us about. Right now I am making key lime topped cupcakes and humming my favorite Easter song from childhood yesterday.

What? Cheesy…I know you’ll forgive me when you try this CBD mini-cupcake dessert recipe.

 

INGREDIENTS:

CBD Topping

1½ tsp. 1000mg. Extra Strength CBD tincture (I love the Mojito Lime from Made by Hemp.)
1 small (4-serving size) box of vanilla instant pudding and pie filling mix
1½ cups whipping cream
¼ cup Key Lime juice (usually bagged for juicing or use reg. lime juice). You may need 3.
3 drops green food color
1½cups powdered sugar (sift twice to improve topping smoothness)

 

For the cupcakes use
1box Betty Crocker™ Super Moist™ yellow cake mix (plus eggs-oil & water for the mix)

 

Frosting
1container Betty Crocker™ Whipped fluffy white frosting
1tablespoon Key lime or regular lime juice
1/2teaspoon grated Key lime or regular lime peel

 

DIRECTIONS:

Step 1: Make topping. In large bowl, beat CBD oil and pudding mix until combined. Whip cream for 2 minutes. Let stand 3 minutes. Beat in 1/4 cup Key lime juice and the food color; stir in powdered sugar until smooth. Cover and refrigerate until cold. Start mini cakes.

Step 2: Heat oven to 350°F (325°F for dark or nonstick pans).

Step 3: Place regular size paper liners in a 12 cup muffin tin and mix cake batter as directed on box.

Step 4: Spoon about 1 rounded tablespoonful batter into each muffin cup. Cups will be about one-third full. Refrigerate remaining batter.

Step 5: Bake 12 to 16 minutes or until toothpick inserted in center comes out clean. Remove from pan to cooling rack. Repeat with remaining batter making 12 more cupcakes. Bake. Cool completely, about 15 minutes. (This recipe is for 24 cupcakes and uses only ½ the batter-the CBD is in the topping, so let the kids bake the remaining batter & ice them…while you make the 24 for the adults!

 

~~~~~~~~TO ASSEMBLE~~~~~~~~

 

Remove paper baking cups from cupcakes. Place on serving plate. Swirl about 2 teaspoons topping on top of each cupcake.

 

Stir frosting in container 20 times. Gently fold in 1 tablespoon Key lime juice and the grated lime peel. Spoon frosting into quart size zip top bag. Cut 1/2-inch opening from bottom corner of bag. Squeeze 1 rounded teaspoonful frosting from bag onto topping. Garnish with tiny lime wedge.
Refrigerate leftovers.
